Huns on every map. They're good at everything. If Vikings are 10/10 on water then Huns are 8.5 or 9 out of 10. Japanese aren't even this good.
BR I would go Huns, Vikings, Mongols. It's the most versatile. Unless you can come up with a special strategy that will work then don't do anything different than this.
Baltic take Huns, Vikings, Mongols.
Yucatan I would go Huns, Mongols, Spanish.
If you are forced to choose Islands due to Baltic on BR then take Huns, Vikings, Japanese.
And if you're forced to go Arabia then take Huns, Mongols, Chinese. Or take Persians instead of Chinese and rape archers.
I was thinking though, and if you guys are playing a good team you don't stand a chance against then I say do something crazy. Come up with a weird strat. Roll the dice. Maybe sling your Hun player on a land map, do something they don't expect. Worth a shot, you're not going to win in a straight up Hun/Mong/Vik war against some 1900's. They would have to make some huge mistakes for you to have a shot playing a normal game.

no house is a big bonus.......the res you save with jap is minimal. With a decent grush you will have around 70+ pop in 20 mins. Thats 13 houses = 390 wood + time to build each house. You will save atmost 200 / 250 wood on mill/farm/camp.
Huns got pala late game + HCA. Japs are slow civ, not really good at raiding. Stable bonus rox too. Helps you maintain pop. Huns got full trash (jap halbs are better tho ). Japs no bloodlines, no hussar.
Jap <<< hun on water. Hun grush is second only to vik.

maya can eew flood and take middle land. Raid in 100 places with 5-10 eew. If you imp fast enough (sub 30), you can totally rule middle with maya. Not coz of their water powers lol, they can grush and still imp around 30 go eew and rape econ.

im not sure whether pro's play LN.
anyway hun have a very poor start in LN, so i think its the only map where hun must be avoided.

china(the best), mongol, other good civs(maya, spanish, persia, jap, celt, korea(better line of sight early on, but a good civ only for flank))

best civs for ln - china(6 vills) + maya (4 vills) huge bonus
third civ
spain - fast building, can get TC up fast also lumber + trade bonus + conqs rox in castle age for raiding, more so than knts.
mong - great imp game and faster hunting means can fued very fast also castle very fast. Depends on map.
Jap - 50% cheap means 50 less wood to chop
celt - fast woodchoppers
pers - start with + 50 food
korea - los is good + trush is also a good option (flank civ like he says)
Thats my order of preference for 3rd civ. I'd go with spain or mong.
Both got great imp game, and a decent bonus.

mong/brit on ln is map dependent. If you get enough sheep, you can fc with brit also with 23 pop. "IF" there is hunt, mong rox. By bad luck if you have no hunt, or little, then mong early advantage is lost.
Play safe -- go chin maya spain.
And suhas -- maya adv >> jap / pers.
